Guatemala Huehue
red applecherrydark chocolate
Washed Process | Huehuetenango | Santa Cruz Barillas
02/The cup
A fully washed Guatemalan coffee from ASOBAGRI, a Fair Trade and Organic certified cooperative of over 1,400 smallholder farmers in Santa Cruz Barillas, a rugged, isolated corner of Huehuetenango. Founded in 1989 by twenty K'anjob'al Mayan farmers and grown today across dozens of Mayan communities at around 1,650 meters. A clean, approachable cup — red apple and cherry up front, a light herbal note, and dark chocolate on the finish. A comfortable everyday coffee that holds up across brew methods.

Tips
- Rinse the filter with hot water before brewing — removes paper taste and preheats the cone.
- Bloom should swell evenly. Uneven swell means grind is too coarse or water too cold.
- Aim for a flat bed at the end. Mounded = uneven extraction.
