A natural-process lot from the Ayla washing station in Sidama, Ethiopia — owned by Testi Trading and operated by the Yonis family. Testi reinvests locally, having built several primary schools and the first high school in the town of Hamasho. This is a classic, careful natural: cherries hand-sorted, floated, then dried on raised beds and turned at least five times a day over 15–21 days. In the cup it's a red-fruit bomb: strawberry jam, raspberry, and cherry. The body is jammy, and the finish is sweet and syrupy. Best one to two weeks after roast.

Tips
- Rinse the filter with hot water before brewing — removes paper taste and preheats the cone.
- Bloom should swell evenly. Uneven swell means grind is too coarse or water too cold.
- Aim for a flat bed at the end. Mounded = uneven extraction.
