A single-origin decaf from El Vergel Estate in Tolima, Colombia, farmed by the Bayter family. Grown as Catimor and Red & Yellow Caturra. Decaffeinated at origin with a natural, sugarcane-derived ethyl acetate (EA) closed-loop system that brings caffeine down to 0.1%. Processing on the farm rather than shipping the green out for decaf helps it hold onto its origin character. Smooth and dessert-like: vanilla ice cream, banana bread crust, and key lime pie, with clove and toffee. As it cools, warming spice, a hint of tartness, and rich chocolate syrup emerge. Roasted light. Rest at least 7 days, 7–10 for espresso.

Tips
- Rinse the filter with hot water before brewing — removes paper taste and preheats the cone.
- Bloom should swell evenly. Uneven swell means grind is too coarse or water too cold.
- Aim for a flat bed at the end. Mounded = uneven extraction.
